Grilled Crimini Mushroom and Roasted Squash Skewers
(Makes 12)
Ingredients
1c. Squash in 1/2inch cubes
12 ea. Crimini Mushrooms
2T. vegetable oil
1 clove garlic, sliced
4T. Olive Oil
½ a lemon
Sea Salt
12 small bamboo skewers – 4-6 inch
Procedure
Prep-Toss the squash and vegetable oil together and roast in a 350 degree oven for 20 minutes until just tender. Cut the Mushrooms in ½.
Assemble-Make little kabobs starting with the squash and alternating with the mushrooms until you have three quash and two mushroom pieces on each bamboo skewer, place the miniature kabobs in a container and add the garlic and olive oil. You can assemble up two days before using.
Cooking-Over a medium hot grill cook the skewers for about three minutes on each side or until mushrooms and squash start to brown.
Serving-Place the hot skewers on a plate and squeeze the lemon over them and give the skewers a good pinch of sea salt, serve immediately.
