Mmmm- this sounds great! From Findlay Market: Irish Cabbage Rolls

Ingredients:
Large outer leaves of cabbage (12) lightly steamed and chilled
½ pound ground lamb
½ pound ground pork
3 leeks, sliced thin
1 ½ cups of barley cooked according to package and cooled
2 Tbs. butter
1 Tbs. vegetable oil
1 cup of Irish whiskey
Salt and pepper to taste

Method:
1. Sauté pork, lamb and leeks in butter and oil, 7 minutes
2. Add ½ cup whiskey and cook meat thoroughly
3. Add cooked barley and remaining whiskey
4. Add salt and pepper
5. Cook on low heat until liquid is absorbed
6. Cool mixture 15-20 minutes or until you can handle it
7. Make rolls using 1/3 cup of mixture
8. Place in casserole dish and bake in oven with cheese sauce for 15 to 20 minutes

Cheese Sauce:
Ingredients:
2 cups of extra sharp white cheddar cheese
1 cup heavy cream
1 ½ cups of milk
1 ½ Tbs. corn starch
¼ cup water
Salt and pepper to taste

Method:
1. Heat cream and milk to scald
2. Reduce heat to simmer and add cheese
3. Whisk until cheese is melted
4. Mix water and corn starch
5. Whisk into cheese mixture
6. Salt and pepper to taste
7. Cook until smooth and slightly thickened.
