Eric Brown sent me his Bourbon Sweet Potato recipe. It sounded so good to me that I’m adding it to the menu this year. Eric slices his sweet potatoes but I’m going to cut mine into bite-sized chunks. I’m also going to add a generous amount of salt and pepper. I’d say this will serve 10-12 and can be made a day or two ahead. Reheat, covered with foil, before serving.

Bourbon Sweet Potatoes
6 large sweet potatoes sliced
1 cup sugar
1 stick butter
1/2 cup or to taste good quality Bourbon
1/2 teaspoon vanilla extract
A pinch or two of fresh ground nutmeg

1. Preheat oven to 350 degrees F (175 degrees C).
2. Arrange sweet potatoes in a 9×13 inch baking dish.
3. Combine sugar, butter, bourbon and vanilla extract in a large saucepan and heat to a boil. As soon as the sauce comes to a boil pour it over the sweet potatoes.
4. Bake 30 to 40 minutes covered or until the sweet potatoes are soft.
