Erin Swing Romanos is the owner of The Sensitive Epicure LLC. She makes “gluten free food so good, you will never want to go back.” Erin was diagnosed with Celiac Disease and Dermatitis Herpetiformis in 2003, and has been working on gluten free (GF) recipe development since 2005. A culinary student at the Midwest Culinary Institute, Erin has worked at the highly acclaimed China Gourmet in Hyde Park for 10 years; trained in Italian cooking by her step-father Fred Lazarus III; and is a degreed Organic Chemist; worked developing food and beverages at Givaudan/Tastemaker; as well as formulating consumer products and synthesizing pharmaceuticals at Procter & Gamble for 14 years.
