Make sure to celebrate Cinco de Mayo! Here’s my guacamole recipe from my book, Amy’s Table: Food for Family and Friends. Serve it up with an icy Margarita. Viva el Cinco de Mayo!

Chunky Guacamole
Serves 4-6
Prep time: 10 minutes

Make ahead: Can be made several hours in advance; refrigerate until ready to serve.
Tip: Press plastic wrap directly on the surface of the guacamole; refrigerate until ready to serve. The limejuice keeps it from discoloring.

2 ripe avocados, pitted and diced
½- 1 cup sweet onion, finely diced
1 jalapeno pepper, seeded and minced
1 small tomato, seeded and chopped
Juice of 1 lime, or to taste
1 –2 tablespoons finely minced fresh cilantro
Salt, to taste

In a medium bowl, lightly mix all ingredients until well blended. Taste and adjust seasonings with salt and hot sauce. Refrigerate, tightly covered, until ready to serve.

    My Guac recipe is almost the same, but I don’t use any tomato but I add 1 clove finely chopped garlic.
