Spicy Pepper Pot
2 red peppers cut julienne
2 yellow peppers cut julienne
4 poblano peppers cut julienne
2 large Spanish onions cut thin julienne
6 garlic cloves minced
1 can diced tomatoes
1 tsp. smoked paprika
1 tsp. ancho chili powder
4 Tbs. olive oil
1/3 cup fresh cilantro chopped
Juice of two limes
Salt and pepper to taste
4 mild andouille sausage links grilled
2 cups of rice prepared according to package instructions
Prepare rice and set aside.
Sauté vegetables in olive oil
Add garlic
When vegetables and garlic are soft, add tomatoes and spices
Reduce heat and simmer until most of the liquid has been cooked away
Add lime juice
Serve over rice with cilantro garnish and sausage link
Note: You may add sour cream if you wish. This dish goes well with a crisp lager.
