Thanks to John Mocker for this great recipe - and for kicking off the recipe exchange! A quick and easy pasta recipe like this proves that, with a little planning, you really can make a wonderful dinner “from the cupboard”.
Linguine with Tuna & Capers (serves 2)
This is one of my quickest and favorite recipes that I whipped up a few years ago…
when I don’t feel like ‘really’ cooking but don’t want to go out I make this ![]()
I always have the ingredients in my well stocked pantry!
1/2# linguine (cooked ala dente)
1/2 jar quality ‘tomato/vodka’ sauce (like Rao’s)
1 clove minced garlic
splash EVOO
1 can italian tuna (or tuna in oil) drained
2 tablespoons small capers
1 tablespoon chopped parsley
Drain the tuna in a colander while cooking the pasta…
In a large sautee’ pan with a splash of EVOO stir in the garlic for a few second
then add the sauce.
When the pasta is cooked and drained add it to saute’ pan with the sauce and
combine. Add drained tuna and capers, stir with spatula
and continue cooking on low heat for a minute or two as pasta, sauce, tuna and capers
are well ‘integrated’…
Put the finished pasta in warm pasta bowls, garnish with a little chopped parsley, replenish
your wine glass
and enjoy! You can add parmesan but I don’t use cheese with pasta/seafood
combinations…
If you have guests maybe add a small salad dressed with balsamic vinagrette…when I’m by
myself I don’t even bother….i just enjoy the pasta and the wine…
