Donna asked for my guacamole recipe that I mentioned (a bit too quickly!) on Jeff and Jenn yesterday. It’s from my book, Amy’s Table: Food for Family and Friends. Here you go, Donna.

Chunky Guacamole Serves 4-6
Prep time: 10 minutes
Make ahead: Can be made several hours in advance; refrigerate until ready to serve.
Tip: Press plastic wrap directly on the surface of the guacamole; refrigerate until ready to serve. The limejuice keeps it from discoloring.

2 ripe avocados, pitted and diced
½- 1 cup sweet onion, finely diced
1 jalapeno pepper, seeded and minced
1 small tomato, seeded and chopped
Juice of 1 lime, or to taste
1 –2 tablespoons finely minced fresh cilantro
Salt, to taste

In a medium bowl, lightly mix all ingredients until well blended. Taste and adjust seasonings with salt and hot sauce. Refrigerate, tightly covered, until ready to serve.

    Thanks Amy for the recipe. It’s a little different from the one I got from my niece, she uses fresh garlic, salsa and green chilies instead of tomato, onions and cilantro. I’m going to give yours a try also.

    You’re welcome Donna. You can easily “blend” your favorite elements from both recipes to create your own perfect guacamole. Enjoy!

    Molly sent a message that she likes to put avocado pits on her guacamole to stop it from turning brown. She mentioned that “It doesn’t do the trick entirely”. The pit in the guac thing is an old wives tale, Molly. To keep guacamole from discoloring make sure there’s some acid in the recipe, like the lime juice in my Chunky Guacamole. Then, gently press plastic wrap onto the surface. It will stay fresh and green for a couple days. The same trick works for cut avocados; just sprinkle the surface with lime juice and wrap in Saran.
