Grilled Pineapple with Malibu Rum Sauce
Serves 8
1 pineapple
Vanilla Ice Cream
Prepare grill. Cut pineapple lengthwise through leaves, keeping leaves attached, into 8 wedges. Grill pineapple wedges, a cut side down, on a lightly oiled rack set 5 to 6 inches over glowing coals until just charred, about 2 minutes on each cut side.
Serve pineapple with ice cream and Malibu Rum Sauce
Malibu Rum Sauce
1 cup (packed) golden brown sugar
1/2 cup (1 stick) unsalted butter
1/2 cup heavy cream
2 tablespoons Malibu rum
3/4 teaspoon ground cinnamon
Stir brown sugar and butter in heavy medium saucepan over medium heat until melted and smooth, about 2 minutes. Add cream, rum, and cinnamon and bring to simmer. Simmer until sauce thickens and is reduced to 1 1/2 cups, about 5 minutes. Serve warm. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before serving.)
