Here’s delicious bread made with Sunkist California navel oranges. I’ve added an optional glaze made with orange marmalade and orange juice. I think you’ll like the moistness and sweetness that it adds to the bread. This bread is best made one day ahead. Mommy's To Die For …. California Navel Orange Yummy Bread
Submitted by Amy Rinner
Makes one loaf
3 Sunkist California navel oranges, washed and dried
1/2 cup sugar
1/4 cup water
1 tablespoon butter
1 cup orange juice
1 egg, well beaten
2 1/2 cups flour
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
Optional Glaze: ½ cup orange marmalade melted with 1 tablespoon orange juice.
Preheat oven to 325 degrees. Grease a standard loaf pan; set aside.
Remove the zest from the oranges using a thin sharp knife. Chop the zest. (Should be about 1/2 cup).
Combine the sugar, water, and orange zest in sauce pan; bring to a boil. Remove from heat. (The mixture will be syrup-y) Add butter, stir until melted. Add the OJ. Stir in the beaten egg. In a medium bowl combine the flour, baking soda, baking powder and salt. Add the orange zest mixture to the dry ingredient; stir just to combine. (Batter will be lumpy). Pour batter into prepared loaf pan. Bake 45 minutes or until toothpick inserted in the center comes out clean.
Remove bread from loaf pan. Place on a cooling rack positioned over a rimmed baking sheet. Brush top of warm bread with marmalade mixture. Cool completely. Wrap in plastic wrap until ready to serve. Try it toasted with butter, too.
