Roast Leg of Lamb with Oven Roasted Potatoes

INGREDIENTS:
Crisco® Original No-Stick Cooking Spray
OR Crisco® Olive Oil No-Stick Cooking Spray
4 medium potatoes, peeled and cut into 2-inch cubes
Salt and pepper to taste
1 (2-1/2 to 3 lb) boneless leg of lamb
2 teaspoons salt
1 teaspoon pepper
3 cloves garlic, slivered
1/2 teaspoon dried rosemary leaves
PREPARATION DIRECTIONS:
1.Preheat oven to 325ºF. Spray a 9×13 roasting pan with no-stick cooking spray. Place potatoes in pan; spray evenly with cooking spray. Season the potatoes with salt and pepper. Toss to coat.
2.Place lamb, fat-side-up, on potatoes. Spray lamb generously with Crisco No-Stick Cooking Spray. Sprinkle lamb evenly with 2 teaspoons salt and 1 teaspoon pepper. Cut small slits in lamb; insert garlic slivers. Sprinkle lamb with rosemary.
3.Bake about 1 hour and 45 minutes or until a meat thermometer registers 160ºF (medium) to 170ºF (well done) Remove from oven and let stand, covered with aluminum foil, 15 minutes before slicing.
Roasted Asparagus with Parmesan

INGREDIENTS:
1 pound fresh asparagus
2 tablespoons Crisco® Pure Olive Oil, divided
Salt and freshly ground black pepper
Grated Parmesan cheese
PREPARATION DIRECTIONS:
1.Heat oven to 450°F. Trim asparagus, snapping off the ends. Drizzle 1 tablespoon olive oil over the center of a rimmed baking sheet; spread asparagus evenly in the pan, in a single layer. Drizzle with the remaining tablespoon olive oil; sprinkle with salt and freshly ground black pepper.
2.Roast 5 minutes for crisp-tender asparagus, 8 minutes for softer asparagus.
3.Transfer asparagus to serving dish. Sprinkle with Parmesan cheese; serve immediately.
Variation:
1.Roasted Broccoli with Parmesan: Substitute 1 pound fresh broccoli, large leaves or woody stalks removed, cut into 2-inch long pieces. Follow directions above, except roast for 5 minutes, turn broccoli; roast 3-5 minutes longer or until crisp-tender.
