Kentucky Baseball Picnic Bird
Basic Stuff
1 3 to 6 pound chicken
3-4 tablespoons Louisiana Hot Sauce
4 sliced apples
¼ cup butter
Rub
¼ cup fresh basil1 tablespoon garlic powder
1 teaspoon Kosher of Sea Salt
1 teaspoon black pepper
Liquid Flavor Essence
8 ounces beer
½ cup Southern Comfort
Cooking Directions
· Melt the butter and add the Louisiana Hot Sauce and paint the critter using a basting brush
· Apply the rub evenly over the bird.
· Add liquid flavor essence to the flavor base.
· Place the bird on the flavor tower.
· Arrange the apple slices around the base of the bird.
· In a conventional oven, cook @ 350° for 1 ½ hours.
· Cook until the drippings are clear and the leg quarters move easily in their joints.
Serve with a black-eye pea salad, fresh bread rolls and baked potatoes. Be prepared to get caught up in the revelry of fun and sun, Rebel yells and foot stompin’ fun.
