Top 5 Pairing Tips from the Cincinnati Wine Festival:

1.You never want your food to overpower your wine or your wine to
 overpower your food.  Simply stated, they should enhance one another.
 Consider pairing a light delicate fish with a white delicate wine.  Or
 perhaps when preparing a more flavorful, oily type fish such as salmon, a
 red wine like Pinot Noir or Beaujolais' might be more complimentary.

2.Throw out the old rule of white meat with white wine and red wine
 with red meat. Many red wines go great with fish and chicken.  It's the
 sauce that needs to be considered.  For example, Bar-BQ chicken would be
 incredible served with a spicy, red zinfandel.

3. Hearty food requires hearty wine!  For instance, leg of lamb is very
 flavorful and needs a robust and full-bodied red wine to compliment it.
 Braised meats, sausages and many Italian dishes are also excellent with
 hearty red wines.

4.Indian and Thai dishes which can be hot and spicy, go particularly
 well with wines (either red or white) that are fruitier.  Sweet and hot go
 great together.  Try a Riesling or a Gewurztraminer.

5. Don't be afraid to try new wines and new foods.  Get to know a
 professional in your neighborhood who can help you make the right decisions.
 They are the experts!
