I recently recieved an email from a listener, Terry S and she asked for a relatively simple chocolate fudge recipe for the holidays.  Here's a link to a really easy fudge from Eagle Brand using their Sweetened Condensed Milk. It even has a how-to video!

I was reminiscing with some of my cooking school colleagues about this incredible cake from Robert Dean, the "Dean of Lean". You have to taste it to believe it. If you're trying to keep your holidays healthy, you owe it to yourself to try it. And yes, the garbanzo beans in the ingredient list are correct- but you'll never be aware of them in the finished cake! For the raspberry coulis, just puree a bag of frozen raspberries and sweeten them with a bit of sugar if desired. Just click read more for the recipe and let me know what you think. Happy Holidays! Make sure you read the review below that Midwest Book Review wrote on Amazon!

In "Amy's Table: Food For Family & Friends", culinary expert Amy Tobin has compiled a wealth of simply wonderful and thoroughly 'kitchen cook friend' recipes that are ideal for any dining occasion. Profusely illustrated in full color throughout, each individual recipe identifies how many it would serve, the preparation time involved, a brief anecdote about the recipes, cooking tips, ingredients, and instructions. From Seared Peppered Tuna with Pickled Cucumber to Italian Wedding Soup; Rough-Cut Cole Slaw with Blue Cheese; Macadamia Chicken with Mango Butter Sauce; Lemon Panna Cotta with Berry Sauce; Spiced Pumpkin Pie with Bourbon Cream; and Chocolate Bowls with Raspberry Sauce, "Amy's Table" offers an amazing variety of gourmet quality dishes and is enthusiastically recommended for both personal and community library cookbook collections.
